What happens if a cable breaks when you need to stop or need to accelerate?
I had my brake cable snap while on my route. Scary stuff! I grabbed my outgoing mail bucket which was on the floor and used it to depress the accelerator. Then I moved to the driver seat and used a hawkbill reacher for the rest of the route.
If you use cables, you should check for fraying every day and replace them once a year- even if they look good.
You can buy a 6-foot length of cable from Home Depot for a few bucks. They sell clamps, clips and loops to make loops or stops as needed.
Probably a good idea to carry an extra length of cable just in case.

I keep a spare set in my vehicle at all times. Also have it set up with 2 cables for each pedal In case one breaks the second will work. It’s a little longer so takes more to engage, more of a safety measure then anything.

So you run with 4 cable housings- 2 for each pedal?
